6-8 medium potatoes 
2 carrots 
1 cup of peas 
250g sautéed tofu 
2 tablespoons of chia seeds 
Olives q.b. 
Chopped parsley 
vegan mayonnaise q.b.
Peel the potatoes and carrots and cut into small pieces. Cook together with the peas.
Separately,  sauté the tofu (which you can make at home using soy milk made in a  soymilk maker) in olive oil and garlic, and seasoning to taste.
Once cooked, let cool completely or refrigerate.
Just  before serving, mix in the potatoes, carrots, peas and tofu. Add the  chia seeds and the chopped parsley. Add vegan mayonnaise and olives.
