Apple and mango muffins

Ingredients (for 12 units):

50 g Teff flour Midzu
200 g rice flour
2 tablespoons lucuma Midzu
cinnamon q.b.
200 ml of natural apple juice
5 tablespoons corn jelly
1 tablespoon chia seeds Midzu
2 apples
40 g dried mango Midzu
60 ml extra virgin olive oil Midzu
1 tablespoon gluten-free baking powder

Preparation:

To the apple juice (which you can easily prepare with the Midzu slow juicer) join chia seeds in order to hydrate. Peel the apples and cut into small squares and chop the dried mango. In a bowl aside mix well the flour, the lucuma, cinnamon and baking powder and add the fruit pieces. Then add the juice with the seeds and stir well. Add olive oil and corn jelly and mix until you get a homogeneous dough. Grease a muffin pan with olive oil and pour the dough and bake in a hot oven at 170 º C, about 30 minutes.

Gluten free recipe, ideal for a snack or to take to a picnic.
