100g wheat flour
100g whole wheat flour
50ml extra virgin olive oil
1.5kg peeled pumpkin
120g brown sugar
2 teaspoons cinnamon
2 tablepoons agar-agar
3 tablespoons chia seeds or tukmaria seeds
2 tablespoons raisins
In a bowl, mix the flours with the water and the olive oil and knead
until it forms a ball. Let it sit for about an hour.
Stretch the dough and line a pie dish previously greased with olive oil.
Use a fork to pinch the dough and bake for about 20 minutes.
Meanwhile, prepare the filling: boil the pumpkin, drain it well and mash
it. Mix in the sugar, cinnamon, orange zest and a tablespoon orange
juice. Heat until it thickens. Add the agar-agar, the raisins and the
chia seeds and softly mix. Remove from heat and let cool.
Pour the filling onto the dough and sprinkle with the cashews.
