50g whole wheat flour
235g self-rising flour
3 flat tsp baking powder
130g Midzu coconut sugar
125ml Midzu coconut oil
325ml filtered water with Midzu water filter
3 tsp powder vanilla
Ingredients for the frosting:
3 tbsp Midzu coconut sugar
1/3 cup vegetable milk of choice at room temperature prepared in the Midzu soy milk maker
1 tbsp cornstarch
juice of 1 small lemon
3 tbsp Midzu coconut oil
Midzu hemp seeds for decorating
Mix all dry ingredients and little by little add the liquid ones until you get a dough you can pour. Grease and flour a pan. Pour the dough and bake for about 180ºC until cooked.
For the frosting mix the cornstarch and the milk in a pot little by little with a wisk wire to avoid lumps. Add the rest of the ingredients, except the lemon and coconut oil. Heat and stir until it thickens. Remove from heat and let cool covered. Now mix in the coconut oil and the lemon juice until smooth. Frost the cake already off the pan and a bit cooled down.
Tip: this frosting can also be used as a filling; you can repeat the cake and place it on top of the first one with the cream in the middle.
