Ingredients (yields 6 servings):
½ cup chia seeds
2 tablespoons cocoa butter
2 tablespoons goji berries
1 tablespoon peruvian maca
1 tablespoon grated coconut
2 tablespoons carob flour
Soak the goji berries and the dates for about an hour. Drain and remove the pits from the dates if necessary. Mince the fruit until it forms a paste. Lightly melt the butter.
In a bowl, mix well the chia seeds with the maca, the coconut and the carob. Add the fruit and the butter and mix well until it forms a dough.
Spread the dough on a tray and refrigerate for some hours; then, cut the bars the size you wish.
Wrapped in parchment paper, these energetic bars can, for example, be taken to school or work as snacks.
