Gluten free dates cake

Ingredients:

400 ml mandarin orange juice
250 g dates
3 tablespoons lucuma powder
3 tablespoons cocoa powder
2 tablespoons chia seeds
400 g brown rice
100 g buckwheat
100 ml extra-virgin olive oil
gluten free baking powder

Preparation:

Cut the dates (pitted) into pieces and place in a food processor (for example in a blender or chopper)Cake along with the two kinds of flour. Blend to mash the dates.
Then squeeze the mandarins (if you prefer you can use oranges) until you have the required quantity of juice. Add the chia seeds to the juice to hydrate a little bit.
In a bowl aside add the flour with the dates, lucuma, cocoa and the baking powder. Mix well and add the juice slowly. Add the oil and mix well until you get a homogeneous dough (if necessary you can add more juice or more flour).Grease a cake pan with olive oil. Pour the dough and bake in a hot oven at 180 º C, for about 40 minutes.
When completely cool, garnish with dates.
